Making Bamboo Salad with Rice

In Vietnam, we have to go to the mountains far away from our villages to harvest bamboo. There are different types of bamboo, but we don’t know what it is called in English. You can purchase bamboo from any Asian store or you can harvest them from the bamboo field if you see one.
You can make bamboo into different dishes and it goes with any meat or just without meat.
1. You can boil the bamboo, shred it, then dry it. This will be preserved for the next year or whenever you want to prepare it.
2. You can make soup to eat with rice.
3. You can make salad to eat with rice.
4. You can do bamboo pickles.
Something to remember, you will have to make sure it is fully cooked or it won’t taste right.
